Tieguanyin is a premium Chinese oolong tea from Anxi in Fujian province. Many different styles of tieguanyin can be produced. The final product is determined by both the terroir and the processing method used. These three tieguanyin are each exemplary exam[ple of their style. All three were produced in Baodu Village in Anxi County of Fujian Province, China.

Tieguanyin - Qingxiang
This is the more modern style of producing tieguanyin. It produces a greener, more vegetal style of tieguanyin. This fragrant style of oolong has a strong orchid aroma with a sweet honey note in the taste.
Tieguanyin - Gaoshan
This fragrant oolong is a Qingxiang style tieguanyin produced from leaves harvested from tea bushes in the tea gardens on the highest elevation of Baodu Village, slightly above 1,000 meters. It has a thick, velvety mouth feel, a strong orchid aroma, and with a sweet honey note in the taste.
Tieguanyin - Chuantong
Chuantong tieguanyin is made using the traditional semi-fermentation process, shaken and roasted. Compared with the Qingxiang Tieguanyin, it has an additional roasting process. The tea leaves are baked at a higher temperature to continuously evaporate excess water, destroy chlorophyll, promote aroma enhancement, and make the color of dry tea darker. Chuantong Tieguanyin can be divided into light, medium, and heavy fire according to the degree of charcoal roasting. This is a medium-fired tieguanyin. It has a mellow taste with a caramel aroma.
