Maocha is a tea that is not quite finished. It still needs to be sorted and has to undergo at least one more round of roasting. Although it is not finished, it is the tea that you will find most farmers drinking. It is refreshing and fragrant. This dancong maocha is processed from the yashi aka duck shit cultivar. It is a "must try" if you are a dancong drinker.
A farmer named Mr. Wei was worried that other farmers in the area would steal clippings from this tree in an effort to grow their own tea tree of the same kind. In an attempt to discourage this, he named his tea ya shi (duck shit) so that no one would want to steal clippings from his tea. The strategy evidently did not work. Duck Shit has become one of the most popular varieties of dancong oolongs.
